Mother's Day is a heartfelt occasion to celebrate the incredible women who nurture and inspire us. While gifts and flowers are lovely, there's something truly special about treating Mom to a homemade feast. Whether it's breakfast in bed with fluffy pancakes and fresh berries or a leisurely brunch featuring her favorite dishes, the act of preparing a meal with love speaks volumes. Beyond the food, it's a day to shower Mom with gratitude, laughter, and cherished moments shared around the table.

In this blog post, I give you three recipes to help you make Mother's Day extra Special. If you are going to make her breakfast in bed, my vanilla French toast is a winner. If you are cooking mom lunch, try my power salad recipe is a great repast for the midday supper. If you are cooking her dinner my Springtime Pasta recipe will have her smiling from ear to ear at your culinary prowess.
BREAKFAST
2024 Mother's Day Edition
Vanilla French Toast Recipe
Ingredients
2 eggs, slightly beaten
2 Tablespoons sugar
1 Tablespoon light brown sugar
1 Tablespoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1 cup milk
1 Tablespoon butter
8 Slices of bread
Cooking Directions
combine eggs, sugars, cinnamon, and salt in a shallow bowl.
Stir in milk.
Mix well with a fork or whisk.
Melt enough butter to lightly coat the nonstick skillet, over medium heat, reserving remaining butter for additional batches.
Dip 2 or 3 bread slices (or as many as will fit into the skillet) into egg mixture one at a time, coating well.
Drain excess.
Place bread in skillet; cook for 3 minutes each side or until lightly browned.
Repeat for remaining bread slices.
LUNCH
Power Salad Recipe
Ingredients
3 Cups of salad greens (Your choice)
1/2 Cup shredded carrot
1/2 Cup shelled edamame
1 Green Granny Smith Apple, sliced
1/4 cup sweet onions, diced
1/4 cup raisins
1/4 cup pecan halves
2 tablespoons gorgonzola Cheese
Cooking Directions
In a medium bowl, gently combine all ingredients.
Toss gently with salad tongs.
Serve with a splash of vinaigrette dressing and top with cheese.
DINNER
Springtime Pasta Recipe
Ingredients
1 Pound cavatappi or other corkscrew-shaped pasta
1 Tablespoon Olive oil
1 1/2 pounds boneless, skinless chicken breast halves, cut into 1-inch pieces.
1 yellow pepper, cored and diced
1 bunch (about 1 pound) asparagus, trimmed and cut into 2-inch pieces
1 pint cherry tomatoes, halved
1 package (5.2 oz) spreadable herb cheese (Boursin)
1/4 teaspoon salt
1/4 teaspoon pepper
Cooking Directions
Heat a large pot of salted water to boiling.
Add pasta and bring back to a boil.
Cook for 6 minutes.
Meanwhile, in a large nonstick skillet over medium-high heat, add olive oil, and tilt the panto coat. Add chicken. Cook for 6 minutes, stirring occasionally.
During the last minute of cooking, add the yellow pepper.
Remove from heat.
Once the pasta has cooked for 6 minutes, add asparagus pieces and cook an additional 2 minutes. Scoop out 1/4 cup pasta water, then drain.
in a large bowl, toss together hot pasta, asparagus pieces, chicken, pepper, tomatoes, herbed cheese, reserved pasta water, salt, and pepper until well blended and cheese is melted.
