For the majority of us Americans, football season is one of the most exciting seasons. It is a time that brings us together, it allows us to share in something greater than ourselves.

This season impress your guests with this delicious Football Playoff platter.


This platter consists of two delicious chicken dishes that I am sure they will want you to add to your Superbowl party menu.



Mock BBQ Chicken drumsticks with a peruvian-style green Crema Recipe




Ingredients


  • Cooking Spray

  • 1 Tablespoon Olive oil

  • 1 Tablespoon honey

  • 1 1/4 teaspoon salt, divided

  • 1 teaspoon ground cumin

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon black pepper, divided

  • 2 garlic cloves, grated

  • 1 1/ pounds of skinless cicken drumsticks

  • 3/4 cup light sour cream

  • 1 cup baby spinach

  • 1/4 cup fresh cilantro plus more leaves for garnish

  • 2 Tablespoons fresh lime juice

  • 1 garlic clove, smashed

  • 1/2 jalapeno, seeded


Cooking Instructions


  1. Preheat Airfryer to 400F. Coat fryer basket with cooking spray.

  2. Stir together oil, honey, 1 teaspoon salt, cumin, paprika, oregano, 1/4 teaspoon black pepper, and garlic in a large bowl.

  3. Add drumsticks and toss to coat.

  4. Arrange drumsticks vertically in basket, leaning against basket wall and one another.

  5. Cook 15-20 minutes or until your meat thermometer reads 165F.

  6. (For even cooking, use tongs to rearrange drumsticks halfway through the cooking process. )

  7. Place sour cream, spinach cilantro, lime juice, 1/4 teaspoon salt, 1/4 teaspoon black pepper, garlic and jalapeno in a food processor and process until smooth.

  8. Serve sauce with chicken. Garnish with cilantro.

Serving: 6



Buttermilk Fried chicken with Garlicky Buttermilk Dressing



Ingredients


  • 2 lb. Bone in, skin-on chicken pieces

  • 1 cup buttermilk

  • 1 Tablespoon seasoning salt

  • 2 cups all purpose flour

  • 1/2 cup Canola oil


Cooking Directions


  1. In a large bowl with a lid or resealable plastic bag; combine chicken, buttermilk, salt and pepper.

  2. Refrigerate for 2 hours or ovedrnight prior to cooking

  3. Drain, then season with salt.

  4. In a brown paper bag add flour and chicken. Close the bag and shake it until chicken is coated. Make sure to shake off any excess flour.

  5. In a skillet add canola oil and fry chicken in batches (oil should read 360F on deep fryer thermometer), over medium heat, turning occassionally.

  6. Cook for 10-15 minutes.

  7. Make sure chicken reads 165F

  8. Serve

Garlicky Buttermilk dressing




Ingredients


  • 4 cloves of garlic, mashed

  • 1/2 teaspoon salt

  • 1 Tablespoon Olive oil

  • 1/2 cup Buttermilk

  • 1/4 cup sour cream

  • 1 Tablespoon Chives

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper


Cooking Directions


  1. Mash garlic cloves and 1/2 teaspoon of salt on a cutting board, making a garlic paste.

  2. Cook the paste in 1 Tablespoon olive oil in a small skillet over medium-low heat, stirring until light golden and very fragrant (4-5 minutes)

  3. Whisk the garlic, Buttermilk, sour cream, salt and pepper until smooth.

  4. Stir in the chives just before serving.

  5. Serve
