Juneteenth-Catfish with Summer Succotash Recipe
Ingredients
2 Cups frozen lima beans
4 4-6oz. Catfish fillets, about 1/2 in. thick
1 Cup purchased corn relish
1 Cup fresh baby spinach
Cooking Directions
Cook beans according to package. Drain in colander; rinse under cold water to cool.
Meanwhile, rinse fish, pat dry with paper towel, brush with olive oil. Sprinkle with garlic salt, onion powder, and pepper.
Place in well-greased grill basket. *For charcoal grill, place basket on rack directly over medium coals.
Grill 6-9 minutes or until fish flakes easily with a fork, turning basket halfway through grilling.
Place fish on plates.
In a large bowl toss together cooked beans, corn relish and spinach.
Serve.
Pickled Green Beans Recipe
Ingredients
3 Lbs. Green beans or yellow wax beans
3 Cups water
3 Cups Cider vinegar
1 Tablespoon salt
3 Tablespoon snipped, fresh dill
6 Garlic cloves, sliced
Cooking Directions
Wash beans; drain. Trim ends.
Place beans in 8-qt Dutch oven.
Add boiling water to cover. Return to boiling.
Cook, uncovered, 3 minutes;drain. Place beans in a large bowl.
In a large saucepan combine 3 Cups water, vinegar, pickling salt, dill, cayenne pepper, and garlic. Bring to boiling. Pour over beans in a bowl. Cool to room temperature. Transfer to a glass container.
Cover; chill at least 4 hours before serving.
Store in fridge for up to 2 weeks.
