A sweet taste of Italy....
When you want a little fancier salad, this is the dish for you. I find it is especially popular served with grilled steak, baked potatoes, and fresh ears of corn on the cob.:

It is also another stand alone dish. You can eat it alone if you prefer. Either way you and your family/friends will be sure to enjoy it!
Herbed Cherry Tomatos with Feta
Ingredients
1 pint Cherry tomatoes, halved
1/4 cup vegetable oil
3 Tablespoons Vinegar
1/4 cup minced parsley
1-1/2 teaspoon minced fresh basil or 1/2 teaspoon of dried basil
1-1/2 teaspoon minced fresh oregano or 1/2 teaspoon of dried oregano
1/4 cup Feta crumble Cheese
1/3 teaspoon salt
1/2 teaspoon sugar
1 Leaf of lettuce *optional
Cooking Directions
1. Place tomatoes in a medium bowl; set aside
2. In a small bowl, combine oil and vinegar
3. Add parsley, basil, fets, oregano, salt, and sugar. Mix well.
4. Pour over tomatoes.
5. Cover and refridgerate for at least 3 hours.
6. Drain; serve on lettuce leaf if desired.
