Celebrate Native American History month with this delicious homemade Rabbit stew...

November is Native American Month. I am always happy to be apart of this celebration. My father's parents were both half native American (Choctaw tribe-Oklahoma) It has always been an honor to have such a rich lineage of ancestors. I hope this month we all take the time to appreciate the many sacrifices Native Americans have made in order to keep our lands, and rivers safe. :

Native American Heritage Month is Full Of Celebrations

One of my favorite Native American Dishes I love to prepare around this time of the year is homemade Rabbit Stew. Contray to popular opinion Rabbit meat was and still is a meat used in Native American cuisine. I know you will enjoy it.

Homemade Rabbit Stew Recipe

Ingredients

• 1 medium rabbit-skinned, and prepared

• 1 mediuim white onion, minced

• 1 stalk of celery, chopped

• 4 Large Potatoes, Cubed

• 5-6 medium carrots, sliced

• 2- 16 oz of Chicken broth-divided

• 1/4 teaspoon salt

• 1/4 teaspoon pepper

• 1/2 teaspoon garlic powder

Cooking Instructions

1. In a medium stew pot, place rabbit along with chicken broth, celery, onion, garlic powder, salt, and pepper.

2. Boil on low heat for 1-1.5 hours (s) until rabbit is almost done.

3. Add cubed potatoes and carrot slices. Cook an additional (30-40 minutes)

4. *If stew gets too sticky be sure to add more broth.

Serve with cornbread.
