Today is  International Women's Day (IWD).

For those who are not familiar with this holiday, it is a holiday dedicated to the pursuit of gender equalityreproductive rights, and violence and abuse against women


This year's theme for the IWD 2024 campaign is Inspire Inclusion. When we inspire others to understand and value women's inclusion, we forge a better world. When women themselves are inspired to be included, there's a sense of belonging, relevance, and empowerment.


The #InspireInclusioncampaign aims to forge a more inclusive world for women and girls.-GTG

How would the world be a better place if women were paid the exact same wage as a man? If women were believed when they were speaking out against their abusers? If they were not told science and engineering jobs are for men? 


These questions must be asked on this day and every day forward. Gender equality in no way, shape, or form, should threaten anyone's Masculinity. Women are asked to be treated fairly. To be treated fairly means to be shown the same respect. 


In 2024, the world's landscape is changing. More and more we are seeing women taking the lead in Government jobs and as the head of the household. It is time for us to remove the stigma that sometimes comes with those roles. Together we can. 


Today, on International Women's Day 2024 I am inspired to make Pasta with Chicken and Peas. I love it because it takes less than thirty minutes to make and is delicious. I hope you enjoy it and let me know how it turns out in the comment section! 


International Women's Day 2024-Pasta with Chicken and Peas Recipe 


Pasta with Chicken and peas recipe virtual shopping list


Ingredients


  • 1 reserved cooked Chicken half(left), skin removed, meat shredded (1 1/2 cups)

  • 12 oz fettuccine pasta

  • 1 Tablespoon cold butter

  • 1/3 cup grated Parmesan, plus more for garnish

  • Salt and Pepper

  • 1 1/4 Cup dry white wine

  • 3/4 cup canned reduced-sodium chicken broth

  • 3 Tablespoons Lemon juice

  • 2 Tablespoons chopped fresh Oregano


Cooking Directions


  1. In a large pot of boiling salted water, cook fettuccine until al dente, according to package instructions. Drain. Set aside.

  2. Add Lemon sauce to the pot.

  3. Bring to a boil; reduce to simmer.

  4. Add peas and chicken; cook until warmed through, 2-3 minutes.

  5. Stir in butter until incorporated.

  6. Remove from heat.

  7. Add pasta and cheese.

  8. Season with salt and pepper.

  9. Toss to combine.

*Garnish with more cheese, if desired. 



Lemon Sauce


  1. Pour the juices from the pan into a measuring cup. 

  2. Skim off the fat.

  3. In a pan cook wine over medium-high heat, scraping up the bits, until reduced by a fourth. (4-6 minutes)

  4. Add broth, lemon juice, and pan juices.

  5. Cook until reduced by a fourth, 5 minutes.

  6. Stir in Oregano.

  7. Add water, if needed.

  8. Should make 1 1/2 Cups
