It's about that time of the year when my craving for seafood comes out. I just love the taste of Crab and Shrimp on a warm day.

Lately, my nostalgia for home-cooked meals has been going into overdrive. When I was a little girl, my father used to make Jack Mackerel, his rendition of a salmon cake. We would call it the poor man's crab cake.
I love to eat it to this day. Whenever I am having a tough time, I find myself making this easy and healthy recipe. It always makes me feel better without the guilt of a heavy meal.
What is Mackerel?
Mackerel is a fish that is a very rich source of omega-3 fatty acids. It is named among one of the healthiest fish in the world. When caught in the open sea, Mackerel should be eaten on the day of capture, unless properly refrigerated or cured.
If you enjoy trying different fish or, are just in need of a fish alternative, this recipe can come in handy. Not only is it easy to make, but can be paired with a variety of sides that would only highlight the deliciousness of the fish.
Another great thing about Jack Mackerel Recipe is that it is cost-effective. You can easily make it under $20 and still have money to spare for that bottle of wine you were eyeing.
Cooking Tips
This recipe is so much better when fried in a cast iron skillet
It can be air fried.
*Use a strainer and let fish sit for 15-20 minutes before using.
*a great side to add to this dish is rice with mushroom gravy. (I use Campbell's mushroom Soup.)
*Chopp up a little more onion to add to the mushroom gravy.
*Add a tablespoon of melted butter to the rice and 3 tablespoons of sugar.

Jack Mackerel Recipe
Ingredients

2 Cans of Mackerel
1/2 Cup Yellow Cornmeal
1/4 teaspoon of salt
1/4 teaspoon of Pepper
1/2 Tablespoon of Seasoning salt
1-2 Eggs
1 Small garlic clove minced
1/4 cup of green onion minced
1/4 cup of white onion minced
1/2 Cup yellow cornmeal
1 Tablespoon Parsley to top *Optional
Cooking Directions
In a medium bowl combine Mackrel, eggs, and onions.
Add cornmeal slowly. Stir until coarsely mixed. Then make them into patties. Should yield 4-8 patties.
Heat oil in a medium skillet.
Once the oil is hot place the patties inside. Cook for 3-5 minutes on each side.
Set aside. Sprinkle with salt and pepper after removing from oil.
Top with Parsley
Air fryer Instructions
Follow instructions #1-2 of the above recipe.
*You can add 1 tablespoon of Olive oil to the mixture or you can use olive oil cooking spray.
Air fry at 400F for 15 minutes flipping every 8.
Top with parsley.
