May is here! April was a wonderful warm-up to Spring. With it, we were able to enjoy some delicious, yet light dishes in the month. I hope you all enjoyed making them as much as I do. I am always emboldened during this season to create healthy dishes that are creative and delicious. I also am a firm believer that although we are surrounded by technology our bodies still respond to certain things like the full moon and the tide. Humans naturally want to eat lighter in the warmer months and heavier during the winter months. The circadian rhythm of life.
One of the most delightful aspects of May is the abundance of fresh produce that graces our tables. From a variety of fresh greens to crisp asparagus and tender peas, the bounty of the season inspires a myriad of culinary creations. Farmers' markets come to life inviting us to explore and experiment with new ingredients. May is the perfect time to embrace the farm-to-table movement, supporting local growers and savoring the unparalleled freshness of seasonal fare.

Soy-Glazed Cod & Bok Choy
INGREDIENTS
2 Tablespoon Honey
2 Tablespoons Low Sodium Soy sauce
1 Tablespoon Balsamic Vinegar
4 (6oz) Cod fillets
1/2 teaspoon Pepper
2 Tablespoon Canola Oil
3 Garlic cloves (crushed with a press)
4 Green onions
1 small chile (all thinly sliced)
1 1-inch piece grated ginger
3 Large heads of Bok Choy
1/4 teaspoon Kosher Salt
1-2 Tablespoon Water
Sesame seeds *For garnish
COOKING INGREDIENTS
In a small bowl whisk, honey, soy sauce, and Vinegar.
Microwave until slightly thickened, 60-90 seconds.
Pat Cod Fillets dry and season with pepper.
Brush half of the glaze over the cod.
Broil until Cod is opaque throughout. 6-7 minutes.
Top with remaining glaze.
Meanwhile, heat canola oil in a 12-inch skillet on medium-high heat.
Add crushed garlic, green onions, chile, and the grated ginger and cook, tossing for 30 seconds.
Add chopped bok choy and kosher salt.
Cover; cook for 2 minutes.
Uncover, cook tossing, until tender, 3-4 minutes (adding 1-2 Tablespoon water if dry).
Serve with glazed Cod.
Sprinkle fish with sesame seeds; if desired.
