Today is one of those delightfully quirky food holidays we can’t help but get excited about — National Twinkies Day! That’s right, April 6th is the official day to honor the golden, cream-filled icon that’s been a part of lunchboxes and late-night snack runs since the 1930s.
Whether you grew up sneaking them into your backpack or only just discovered their nostalgic charm, Twinkies are a uniquely American treat. But here’s the thing: you don’t need to run to the store or rely on processed snacks to get your fix. Today, we’re celebrating by making a homemade version — and yes, it’s easy, equitable, and super fun to whip up in your own kitchen.
Let’s take a moment to appreciate the classic Twinkie: a soft, golden sponge cake wrapped around fluffy vanilla cream. Simple, sweet, and smile-inducing. And when made from scratch? Even better.

🍯 Homemade "Twinkies"-Style Snack Cakes
Easy, Affordable, and Packed with Nostalgic Goodness
Ingredients – For the Cakes:
1 cup all-purpose flour
1/2 cup sugar
1/4 tsp salt
1/2 tsp baking powder
2 large eggs
1/4 cup milk (any kind you have — oat, almond, dairy!)
1/4 cup neutral oil (like canola or vegetable)
1 tsp vanilla extract
For the Cream Filling:
1/2 cup unsalted butter or plant-based butter, softened
1 cup powdered sugar
1 tsp vanilla extract
2 tbsp milk (or plant-based alternative)
🧁 Directions:
1. Preheat & Prep
Preheat your oven to 350°F (175°C). Lightly grease a mini loaf pan or cupcake pan. You can even make makeshift Twinkie molds by rolling foil into small boats and lining them with parchment paper!
2. Mix the Batter
In a large bowl, whisk together the flour, sugar, salt, and baking powder. In a separate bowl, beat the eggs, milk, oil, and vanilla. Combine wet and dry ingredients until smooth — but don’t overmix!
3. Bake It Up
Spoon the batter into your molds, filling each about halfway. Bake for 12–15 minutes or until golden and a toothpick comes out clean. Let cool completely on a wire rack.
4. Whip the Cream Filling
While the cakes cool, beat the butter until fluffy, then slowly add in powdered sugar, vanilla, and milk. Beat until it becomes light and airy.
5. Fill the Cakes
Using a piping bag (or a zip-top bag with the corner snipped), poke 2–3 holes into the bottom of each cake and fill with cream. Don’t be shy — you want every bite to have a bit of that dreamy filling!
