This Shrimp Crunch Simple Salad Recipe became a fast favorite of mine. Not only is it healthy, and light, it is cost effective and easy to prep and make. If you are a taco tuesday type pf person you can add this to the Teusday menu as well. It has all the right qualities that make it a delicious and authentic Mexican treat. :

Cooks Tip
*Add red or green thin slices of red or green bell pepper, black beans or sweet corn to this salad to give it even more of a zesty, fresh flavor.

Shrimp Crunch Simple Salad Recipe
Ingredients
4 Corn Tortillas
2 teaspoons Olive oil
Taco Seasoning
1 Pound medium Shrimped, peeled and deveined
2 tablespoons fresh lime juice
2 Tablespoon shredded Monterey Jack Cheese & Pepper Jack Cheese
1 Medium head of Romaine lettuce
1 bunch of baby spinach
Cooking Directions
1. Preheat oven to 375 F. Place tortillas on a baking sheet. Brush both sides with teaspoon of oil; Sprinkle each side with Taco seasoning.( about 1/4 Teaspoon per tortilla). Bake until golden brown and crisp, turning them once, 8-10 minutes. Set aside. Let cool.
2. Heat broiler. In a large bowl. toss shrimp with the remaining taco seasoning. Season with Salt and pepper. Lay Shrimp flat on a broiler pan, and cook until browned and opaque throughout, turning every 3-4 minutes.
3. Mix Spinach/Romaine in a large bowl. Break up cooked tortilla into pieces. Top salad with shrimp and broken tortillas. Garnish with Cheeses and a squeeze of lime juice.
