Mini Shrimp Rolls: A little taste of home

Light, refreshing and a taste straight from the bayou. Mini Shrimp roll recipe is a treat.



You know I love a good Southern dish. I love seafood and I love spice. Try these mini Shrimp rolls at your next Summer function. They will be gone in no time.

Mini Shrimp Rolls Recipe



Ingredients


  • 2 green onions thinkly sliced and divided

  • 1 lb. of clean cooked shrimp, chopped

  • 2 Celery stalks

  • 1/4 cup of Mayo

  • 1/3 cup Cream Cheese

  • 1 teaspoon creole seasoning

  • 1/4 teaspoon old bay seasoning

  • 1 pkg. (12 oz.) Hawaiian dinner rolls

Cooking Directions

  1. Set aside 2 Tablespoon onions. Combine remaining onions with shrimp,celery, mayo, cream cheese and seasonings. Use a serrated knife to make vertical cut in in top of each roll, being careful to not cut all the way through the bottom of roll.

  2. Spray rolls and large skillet with cooking spray. Place rolls in prepared skillet; cook on medium heat 1 min. on each side or until rolls are lightly toasted on all sides.

  3. Fill rolls with shrimp mixture; sprinkle with remaining onions.
