Chivey Polenta Recipe

A great addition to elevate your soul food or Mexican cuisine. Chivey Polenta.

The downlow on Polenta. It sounds complicated and fancy, but then you realize it's cornbread. Yeeeeep, You heard me. Polenta is basically the rich man's cornbread. Here is a recipe I find that works for first timers and those who have a seasoned Polenta Palate.

Chivey Polenta Recipe


  • ¾ Cup Yellow Cornmeal

  • 3 Cups Water

  • ¼ Cup Chives

  • ½ Cup of monterey jack cheese

Cooking Directions

  1. Bring 3 cups of water to boil in medium saucepan.

  2. Slowly whisk cornmeal into the water.

  3. Whisk for 8 more minutes or until mixture gets thick.

  4. Start stirring in the chives and cheese.

  5. Pour into dish or your choice and store in the fridge for a minimum of 45 minutes.

  6. Take out. Slice. And serve.
