Your friends and family will always request this dish. The yummy Summer Spinach salad. Tossed with ripe banana chunks, fresh strawberries, and toasted almonds. It's perfect for parties or just to feel the Summer nostalgia wash over you.
Combine the tangy poppy seed dressing in a blender for faster results.
Spinach Summer Salad
Ingredients
1/2 cup Vegetable Oil
1/4 cup Chopped Onion
2 Tablespoons plus 2 teaspoons Red Wine Vinegar
2 Tablespoons plus 2 teaspoons Sugar
1-1/2 teaspoons Ground Mustard
1/2 teaspoon Salt
1 1/2 Teaspoon Poppy Seeds
8 cups of Torn Fresh Spinach
3 Green onions, sliced
2 pints Fresh Strawberries, sliced
3 large ripe bananas, cut into 1/2-inch slices
1/2 Cup of slivered almonds, toasted
Cooking Directions.
1. Place the first 6 ingredients in a blender/food processor.
2. Cover and process until the sugar is dissolved.
3. Add poppy seeds; process just until blended.
4. In a salad bowl of your choice, combine the remaining ingredients.
5. Drizzle with dressing, and toss to coat.
Serve immediately.
