This is my Down home Chivey potatoes recipe. It can be made with instant potatoes as well as regular. Chives is a great ingredient to add a great flavor to your potatoes. Chive Potatoes Recipe



Ingredients


  • 3 Pounds of Potatoes (of your choice)

  • 1/2 Teaspoon Salt

  • 1 cup Heavy Cream

  • 1/4 Teaspoon of Black Pepper

  • 1/4-1/2 Cup of Chives

  • 1 1/4 Stick of Butter

Cooking Directions


1.Peel potatoes and place them in cold water as you peel them so they do not change color.

2. Slice Potatoes into thin strips or cubes.

3. Place in a large pot and cook until ready, About 15-25 minutes.

4. Take a strainer and drain potatoes.

5. Put potatoes back on stovetop at medium heat and begin mashing and whipping the potatoes. Stir in butter, then the heavy cream. Whip until smooth. Add chives and pepper. Then add salt at the end. Be sure to taste before serving.

Instant Potatoes


  1. Substitute water for cream/milk

  2. Use whisk.

  3. Add more flakes for the right consistency

  4. Taste for consistency when adding flakes
