One thing I love about cooking is finding so many wonderful,yet different ways to cook some of my favorite foods. I love collard greens and finding different ways to cook them. This recipe is sure to liven up your weekday menu as well as your taste buds.:

This dish is quick to make. It has rich flavors and can be filling in a good way. This dish is also great for midweek when you want to have a easy meal with little wait time. Let me know in the comments section how it turned out.

Collard Green Carbonara Recipe
Ingredients
12 oz. uncooked Spaghetti
6 thick hickory bacon slices, chopped
1 medium red onion, sliced and halved
2 garlic cloves, minced
4 cups of firmly packed chopped fresh collard greens
3 large eggs, lightly beaten
1 large egg yolk, lightly beaten
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/2 teaspoon dried crushed red pepper
3 Cups (12oz) freshly shredded Parmigiano Reggiano cheese
Cooking Directions
Cook Pasta according to package instructions.
While pasta is cooking, cook bacon in a large skillet over medium/high heat until crisp (about 5-6 minutes) Drain on paper towels, reserving drippings in skillet.
saute' onion in hot drippings (4-5 minutes) or until golden brown and tender.
Add garlic; sautee' 1 minute
Add collards; sautee' 5 minutes
Remove from heat
Add bacon
Whisk together eggs, egg yolk, next 3 ingredients and 2 1/2 cups cheese un a large bowl.
Drain pasta, reserving 1/2 cup pasta water
Immediately pour hot pasta into egg mixture; toss to coat. (Heat from the pasta will partially cook the eggs)
Add collard mixture; toss to combine.
Stir in enough pasta water to reach desired consistency.
Sprinkle with remaining 1/2 cup cheese.
Serve and enjoy your Collard Green Carbonara
