November is Native American Month. I am always happy to be apart of this celebration. My father's parents were both half native American (Choctaw tribe-Oklahoma) It has always been an honor to have such a rich lineage of ancestors. I hope this month we all take the time to appreciate the many sacrifices Native Americans have made in order to keep our lands, and rivers safe. :
Native American Heritage Month is Full Of Celebrations
One of my favorite Native American Dishes I love to prepare around this time of the year is homemade Rabbit Stew. Contray to popular opinion Rabbit meat was and still is a meat used in Native American cuisine. I know you will enjoy it.
If you have never had the chance to eat rabbit and would like to here is your chance. Happy Eating !
Homemade Rabbit Stew Recipe
Ingredients
1 medium rabbit-skinned, and prepared
1 mediuim white onion, minced
1 stalk of celery, chopped
4 Large Potatoes, Cubed
5-6 medium carrots, sliced
2- 16 oz of Chicken broth-divided
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
Cooking Instructions
In a medium stew pot, place rabbit along with chicken broth, celery, onion, garlic powder, salt, and pepper.
Boil on low heat for 1-1.5 hours (s) until rabbit is almost done.
Add cubed potatoes and carrot slices. Cook an additional (30-40 minutes)
*If stew gets too sticky be sure to add more broth.
Serve with cornbread.
