Vegetarian Sweet Potato and Black Bean Tacos Recipe

Ingredients
Servings: 4 (8 tacos)
2 medium sweet potatoes, peeled and diced

1 (15 oz) can of black beans, drained and rinsed
8 small corn or flour tortillas
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
1 avocado, sliced
Crumbled feta or cotija cheese (optional)
For the lime crema:
1/2 cup plain Greek yogurt (or sour cream)
Juice of 1 lime
1/2 teaspoon garlic powder
Salt, to taste
Cooking Instructions
Preheat your oven to 400°F (200°C). On a baking sheet, toss the diced sweet potatoes with olive oil, chili powder, cumin, salt, and pepper. Spread them out evenly and roast for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and slightly caramelized.
While the sweet potatoes are roasting, heat the black beans in a small saucepan over medium heat until warmed through. You can season them with a little cumin, salt, and pepper if you like, but they’re delicious as is.
