Spring is a great time to get back in touch with nature and eat a much more healthy, balanced diet. Winter and Fall can have you craving lots of sugary food items. This Spring I aspire to give you some great Salad recipes that I hope you will incorporate into your meals. 


Not only are they easy to make and delicious, but salads are a great way to incorporate vitamins you may not be getting. Not to mention it does wonders for your hair, skin, and nails.

This Arugula salad is one of my favorite salads to make. It has a low-calorie count and the berries that are added are loaded with good antioxidants our bodies need to fight a variety of diseases, including lung, skin, and cervical cancer; heart disease; high blood pressure, and age-related mental decline.

Arugula Salad With Berry Dressing Recipe



Arugula Salad With Berry Dressing recipe virtual shopping list

 


Ingredients


  • 1 Cup strawberries, hulled and halved

  • 2 Tablespoons of Balsamic Vinegar

  • 1 Tablespoon Canola oil

  • 1 Teaspoon of Honey

  • dash of salt

  • 2 Tablespoons chopped pistachio nuts

  • 1-4oz. log goat cheese (chevre)

  • 4 Cups arugula leaves

  • 3/4 Cups blackberries, blueberries, and raspberries 

  • 1/4 Cup thin strips of shaved Jicams*, (Optional)


Cooking Directions


  1. Berry Dressing: In a blender combine 3/4 Cup strawberries, vinegar, oil, honey, and salt. Cover and blend until smooth; set aside.


  1. Spread pistachio nuts on a piece of waxed paper. 

  2. Roll the goat cheese log in the nuts until it is well coated. 

  3. Slice goat cheese crosswise into 8 slices.

  4. Place arugula and remaining strawberries in the serving dish.

  5. Top with blackberries, cheese slices, and Jimaca.

  6. Drizzle berry dressing.
