Appetizer anxiety? Never heard of it? It is when you get a last minute invite to a potluck and you hae to whip an appetizer that will be eaten and wanted by all. A great appetizer can save any party and smooth over any party hiccups.

One of my favorite appetizers to cook is Jalapeno poppers. I add Shrimp to mine. It elevates the flavors while still giving it that southern Barbecue feel that we all love so much. Time wise, it is easy to prepare. I don't know what it is about the South and Summer bbqs having a mixture of sweet and heat,Not to mention you come across some of the yummiest soul food you will ever eat.
This recipe does just that.
If you are a spice lover this recipe is definitely for you. You can substitute the mild Jalapenos for spicier ones.
If you are allergic to shellfish you can remove the shrimp and add shredded chicken. It is a great substitue and will have the same texture as shrimp.
You can also substitute the maple bacon for the bacon of your choice. Turkey bacon can be used as a healtheir option.

Bacon Wrapped Stuffed Jalapeno Recipe

Ingredients
1 pack of Maple Bacon- cut in halves
4 large jalapenos-seeded and washed
1 pound of Shrimp deveined and cleaned
1/2 Teaspoon of BBQ Seasoning
1/4 Teaspoon Cajun Seasoning
8 oz. Philadelphia cream cheese
Cooking Directions
1. Pre-heat oven to 350F.
2. Half and de-seed Jalapenos
3. In medium bowl, add Cream cheese, bbq seasoning, cajun seasoning together and whip until smooth. Set aside.
4. Cut shrimp into small pieces. Making sure to remove tails before.
5. Put chopped shrimp into cream cheese seasoning mix and stir until shrimp is blended in.
6.With a tablespoon fill Jalapeno halves with cream cheese/shrimp/seasoning mix.
7. Wrap with bacon.
8. Put in casserole Dish. Bake @ 350F for 10 minutes then 425F for 15-18 minutes.
9. Take out and let cool. Serve as an appetizer or side.
