Cinco De Mayo Feast Edition

Cinco de Mayo, a vibrant celebration of Mexican culture and heritage, offers the perfect opportunity to gather friends and family for a festive fiesta. From colorful decorations to mouthwatering cuisine, hosting a Cinco de Mayo party is a joyous affair that delights the senses and brings people together in a spirit of camaraderie and merriment.

One of the most exciting aspects of hosting a Cinco de Mayo party is the opportunity to indulge in a culinary experience that showcases the rich and flavorful traditions of Mexican cuisine.

From my famous taco platter to my refreshing Lime Sherbert, the options are endless. This year I urge you all to expand on the Taco platter and set up a DIY taco bar. It will allow guests to customize their dishes while adding an interactive element to the festivities and ensuring everyone finds something delicious to eat.

Decorating for a Cinco de Mayo party is a joyous affair, with vibrant colors and festive motifs taking center stage. From papel picado banners fluttering in the breeze to colorful piñatas hanging from the ceiling, every element of the decor adds to the festive ambiance. Table settings adorned with bright flowers and traditional Mexican pottery create an inviting atmosphere that invites guests to relax and enjoy the festivities.

But perhaps the most rewarding aspect of hosting a Cinco de Mayo party is the opportunity to come together with loved ones and celebrate the beauty of diversity and inclusivity. As guests mingle and laugh, sharing stories and savoring delicious food, the true spirit of Cinco de Mayo shines through, reminding us of the importance of friendship, laughter, and the joy of coming together to celebrate life's special moments. So, gather your amigos and get ready to fiesta like there's no mañana!

In 2024, I want to add a nonmeat option to your Cinco de Mayo Celebration so everyone can enjoy it. My carrot Tacos are just the thing. For those who want to give their guests more than just tacos and fajitas. Here is my Triple Decker Tortilla Pie Recipe. Enjoy! Please let me know in the comment section how it turns out! 

Carrot Taco Recipe


  • 1/2 teaspoon ground Cumin

  • 1/2 teaspoon coriander

  • 1/4 teaspoon chili powder

  • 1/4 teaspoon ground cinnamon

  • 1/8 teaspoon cayenne pepper

  • 4 medium carrots, thinly sliced

  • 1/2 Cup cooked brown rice

  • 1/2 Cup cooked or low sodium canned black beans, rinsed and drained

  • 8-8 inch whole-wheat tortillas

  • 1/4 Cup chopped cilantro (optional)

  • 1/2 cup shredded lettuce

  • 1 Ounce Cojita Cheese grated (about 1/4 Cup)

Cooking Directions

  1. Pour 2 Cups of water into a medium saucepan.

  2. Add cumin, coriander,chili powder, cinnamon, and cayenne

  3. Bring to a boil. Add Carrots and return to boiling.

  4. Reduce heat. Cover and cook until tender, about 10 minutes. Drain carrots.

  5. Divide rice, beans, and carrots among tortillas. Then pile on cilantro, lettuce, and cheese. 

  6. Fold and serve

Triple Decker Tortilla Pie Recipe


  • 2-2 1/2 Pounds shredded chicken

  • 1 can of enchilada sauce (your choice)

  • 1 Bag of 10-inch Flour tortillas

  • 1/3 Cups Mexican cheese

  • 1/3 Cup Monterey jack cheese

  • 1 Head of romaine lettuce

  • 8-10 cherry tomatoes (halved)

  • 2 Avocados (diced)

Cooking Directions

  1. In a medium bowl, mix shredded meat and enchilada sauce.

  2. Place 1 flour tortilla in a 10-12 in. skillet.

  3. Top with half of the chicken mixture and 1/3 cup shredded cheese.

  4. Repeat layering, then top with 1 final tortilla.

  5. Sprinkle with 1/3 cup Monterey jack cheese.

  6. Bake at 450F for 8-10 minutes or until heated through and cheese has melted.

  7. To serve, top with shredded romaine lettuce, halved cherry tomatoes, and diced avocado.
