It will allow guests to customize their dishes while adding an interactive element to the festivities and ensuring everyone finds something delicious to eat.

Cinco De Mayo Feast Edition
Carrot Taco Recipe
Ingredients
1/2 teaspoon ground Cumin
1/2 teaspoon coriander
1/4 teaspoon chili powder
1/4 teaspoon ground cinnamon
1/8 teaspoon cayenne pepper
4 medium carrots, thinly sliced
1/2 Cup cooked brown rice
1/2 Cup cooked or low sodium canned black beans, rinsed and drained
8-8 inch whole-wheat tortillas
1/4 Cup chopped cilantro (optional)
1/2 cup shredded lettuce
1 Ounce Cojita Cheese grated (about 1/4 Cup)
Cooking Directions
Pour 2 Cups of water into a medium saucepan.
Add cumin, coriander,chili powder, cinnamon, and cayenne.
Bring to a boil. Add Carrots and return to boiling.
Reduce heat. Cover and cook until tender, about 10 minutes. Drain carrots.
Divide rice, beans, and carrots among tortillas. Then pile on cilantro, lettuce, and cheese.
Fold and serve.
Triple Decker Tortilla Pie Recipe
Ingredients
2-2 1/2 Pounds shredded chicken
1 can of enchilada sauce (your choice)
1 Bag of 10-inch Flour tortillas
1/3 Cups Mexican cheese
1/3 Cup Monterey jack cheese
1 Head of romaine lettuce
8-10 cherry tomatoes (halved)
2 Avocados (diced)
Cooking Directions
In a medium bowl, mix shredded meat and enchilada sauce.
Place 1 flour tortilla in a 10-12 in. skillet.
Top with half of the chicken mixture and 1/3 cup shredded cheese.
Repeat layering, then top with 1 final tortilla.
Sprinkle with 1/3 cup Monterey jack cheese.
Bake at 450F for 8-10 minutes or until heated through and cheese has melted.
To serve, top with shredded romaine lettuce, halved cherry tomatoes, and diced avocado.
