You know me by now, and you know I love a good salad. Summer is almost over , but that doesn't mean we have to stop eating healthy. This Edamame Corn Salad is so refreshing, you will want it even after Summer is long gone. Let me know in the comments how this yummy salad recipe turned out. :
A refreshing corn salad you will want long after Summer is over.
Edamame Summer Salad Recipe
Ingredients
6 ears of corn on the cob (husks and silk removed)
1 cup edamame (shelled, cooked & peeled)
1/2 cup chopped red peppers
1/2 cup slivered red onions
2 Tablespoons of chopped fresh cilantro
1/4 Tablespoon fresh ground pepper
1/2 Cup Mayo
2 Tablespoons of Parmesan cheese
1/2 teaspoon of sea salt.
Cooking Directions
Heat the grill to medium/high heat.
Grill corn 8 to 10 minutes or until tender and lightly brown turning occasionally cook slightly.
Meanwhile, combine the next five ingredients in a medium bowl. Mix the mayo and cheese until blended well.
Add the edamame mixture.
Mix lightly.
Prep time is 20 minutes
Servings:10 (1/2 a cup each.)
Chef's Tip For The Corn: place in a small bowl upside down inside a large bowl. Stand the corn on top of a smaller bowl and use a sharp knife to slice down along the cob. Add the corn to the edamame mixture and toss lightly.
