Good Thyme Gal’s Chewy Brown Sugar Cinnamon Cookies

Servings: 20–24 cookiesPrep Time: 10 minutesCook Time: 10 minutes
Ingredients
1 cup packed brown sugar
½ cup unsalted butter, softened
1 large egg
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 tsp ground cinnamon
½ tsp baking soda
¼ tsp salt
Optional: 2 tbsp granulated sugar + ½ tsp cinnamon for rolling
Instructions
Cream the Butter & Sugar: In a bowl, beat together brown sugar and butter until creamy and smooth. Add the egg and vanilla, mixing until combined.
Combine the Dry Ingredients: In a separate bowl, whisk together flour, cinnamon, baking soda, and salt.
Bring the Dough Together: Add the dry ingredients to the wet mixture. Stir just until everything is incorporated (don’t overmix !!!)
*Optional Cinnamon Roll: For extra sparkle, combine the granulated sugar and cinnamon in a small bowl. Roll each dough ball in the mixture before baking.
Bake: Scoop tablespoon-sized dough balls onto a parchment-lined cookie sheet. Bake at 350°F (175°C) for 9–11 minutes or until lightly golden on the edges.
Cool & Enjoy: Allow the cookies to cool for 2 minutes on the baking sheet, then transfer to a rack. Share immediately or store in an airtight container.
