🌽 Equitable Corn Fritter Recipe (Crispy, Golden & Budget-Friendly)

Servings: Makes about 10–12 frittersPrep Time: 10 minutesCook Time: 15 minutes

Ingredients:

  • 1 cup corn (fresh, frozen, or canned)

  • ½ cup all-purpose flour

  • 1 egg

  • ¼ cup milk (or plant-based alternative)

  • ¼ cup diced onion or scallions

  • 1 garlic clove, minced (or ½ tsp garlic powder)

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp smoked paprika (optional, but delicious)

  • Oil for pan-frying (vegetable, avocado, or olive)


Directions:

  1. In a mixing bowl, combine corn, flour, egg, milk, onion, garlic, and spices. Stir until just combined into a thick batter. If too runny, add a tablespoon more flour.

  2. Heat a skillet over medium heat and add enough oil to coat the bottom.

  3. Drop spoonfuls of batter into the skillet, flattening slightly with the back of a spoon.

  4. Cook 2–3 minutes per side, or until golden brown and crisp.

  5. Drain on paper towels. Serve hot with a dipping sauce, hot sauce, or maple syrup.


Make It Your Own:

  • Add a handful of shredded zucchini or sweet potato for extra veggies.

  • Stir in a pinch of cayenne or chopped jalapeños if you like a little kick.

  • Use chickpea flour for a gluten-free twist.
