🥗 Recipe: Rainbow Roasted Veggie Bowls with Herbed Tahini Drizzle
Serves: 4Prep Time: 15 minutesCook Time: 25 minutes
Ingredients:
For the veggies:
1 zucchini, sliced
1 red bell pepper, chopped
1 cup cherry tomatoes
1 cup broccoli florets
1 small red onion, sliced
2 tbsp olive oil
Salt, pepper, and garlic powder to taste
For the tahini drizzle:
¼ cup tahini
Juice of 1 lemon
1 garlic clove, minced
2 tbsp chopped parsley or Good Thyme Gal’s “Zesty Garden Herb” seasoning
Water to thin
To serve:
Cooked quinoa, brown rice, or greens
Optional toppings: avocado, feta, sunflower seeds

Preheat oven to 425°F.
Toss veggies with olive oil and seasoning. Spread on a sheet pan and roast for 20–25 minutes, flipping halfway.
Meanwhile, whisk together tahini, lemon juice, garlic, and herbs. Add water a tablespoon at a time until desired consistency.
Assemble your bowls with a base of grains or greens, top with roasted veggies, and drizzle with herbed tahini. Add any extras you love!
