Ingredients (Serves 4):

1 bunch of fresh asparagus, ends trimmed
1 can of chickpeas, drained and rinsed
2 tablespoons olive oil
2 cloves garlic, minced
Juice and zest of 1 lemon

Optional: sprinkle of grated parmesan or nutritional yeast
Instructions:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Toss the chickpeas with half the olive oil, salt, and pepper. Spread them on one side of the baking sheet.
In a separate bowl, toss the asparagus with the remaining oil, garlic, and lemon zest. Lay them on the other side of the baking sheet.
Roast for 20–25 minutes, flipping the chickpeas halfway through, until they’re crispy and the asparagus is tender with golden tips.
