🥕 Equitable Roasted Harvest Bowl Recipe

Serves: 4 | Prep Time: 15 minutes | Cook Time: 25 minutes
A warm, nourishing dish that celebrates seasonal produce and mindful eating.
Ingredients
2 cups cubed sweet potatoes
2 cups Brussels sprouts, halved
1 red onion, sliced
1 tablespoon olive oil
1 teaspoon smoked paprika
Salt and pepper to taste
1 cup cooked quinoa or brown rice
½ cup canned chickpeas, rinsed and drained
2 tablespoons tahini
Juice of 1 lemon
1 tablespoon maple syrup or honey
1 tablespoon warm water (to thin)
Fresh herbs (parsley or thyme) for garnish
Cooking Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss the veggies: In a large bowl, combine sweet potatoes, Brussels sprouts, and onion with olive oil, paprika, salt, and pepper. Spread evenly on the sheet.
Roast for 20–25 minutes, stirring halfway through, until tender and caramelized.
Prepare the tahini dressing: In a small bowl, whisk together tahini, lemon juice, maple syrup, and warm water until smooth.
Assemble the bowl: Divide quinoa among bowls, top with roasted vegetables and chickpeas, and drizzle generously with tahini dressing. Garnish with herbs and enjoy warm.
