Ingredients:
2 tbsp olive oil
1 medium onion, diced
1 red bell pepper, diced
2 garlic cloves, minced
1 tsp ground cumin
1 tsp smoked paprika
1/4 tsp chili flakes (optional)
1 (28 oz) can crushed tomatoes
Salt and pepper to taste
4–6 large eggs
Fresh parsley or cilantro, for garnish
Crusty bread or pita, for serving
Directions:
Sauté the vegetables: Heat olive oil in a large skillet over medium heat. Add onion and bell pepper, cooking until softened (about 5 minutes).
Add garlic & spices: Stir in garlic, cumin, paprika, and chili flakes. Cook for 1–2 minutes until fragrant.
Simmer the sauce: Pour in crushed tomatoes, season with salt and pepper, and simmer for 10–12 minutes until thickened.
Cook the eggs: Make small wells in the sauce and crack eggs into each. Cover and cook gently until whites are set but yolks remain runny (about 5–7 minutes).
Finish & serve: Garnish with fresh herbs and serve with crusty bread or pita for dipping.
