Ingredients:

  • 1 ½ cups rolled oats

  • 1 cup whole wheat flour (or all-purpose)

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup peanut butter (natural or regular)

  • ½ cup honey or maple syrup

  • 1 teaspoon vanilla extract

  • ⅓ cup coconut oil (or butter, melted)

  • ½ cup fruit jam or jelly (strawberry, grape, or your favorite!)

Instructions:

  1. Preheat & Prep – Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.

  2. Mix Dry Ingredients – In a large bowl, combine the oats, flour, baking soda, and salt.

  3. Mix Wet Ingredients – In another bowl, whisk together peanut butter, honey (or maple syrup), vanilla, and melted coconut oil until smooth.

  4. Combine – Pour the wet ingredients into the dry ingredients and stir until well combined. The mixture should be crumbly yet hold together when pressed.

  5. Assemble – Press half of the oat mixture into the prepared baking dish to form an even layer. Spread the jam or jelly over the top. Then, sprinkle the remaining oat mixture over the jam layer, lightly pressing it down.

  6. Bake – Bake for 25-30 minutes, or until golden brown. Let it cool completely before slicing into bars.

  7. Enjoy! Store in an airtight container for up to a week, or freeze for longer storage.
