Ingredients:

  • 1 cup good-quality dark chocolate chips or chopped chocolate (vegan if needed)

  • ½ cup full-fat coconut milk or heavy cream

  • 1 tsp vanilla extract

  • Pinch of salt

  • Cocoa powder, shredded coconut, or crushed nuts (for rolling)

Cooking Instructions:

  1. Warm the cream: In a small saucepan, gently heat the coconut milk or cream until just simmering—don’t let it boil.

  2. Pour over chocolate: Place your chocolate in a heatproof bowl and pour the warm cream over it. Let it sit undisturbed for 2–3 minutes.

  3. Stir to combine: Add the vanilla and salt, then stir until smooth and glossy. This is your ganache!

  4. Chill: Cover and refrigerate for 1–2 hours, until firm but scoopable.

  5. Scoop & roll: Using a spoon or melon baller, scoop small portions and roll into balls. Then roll each one in your coating of choice—cocoa, coconut, nuts, or even freeze-dried fruit.

  6. Chill again (optional): Pop them back in the fridge to firm up before serving… or eat one immediately. You’ve earned it.

Makes about 12–16 truffles. Stores beautifully in the fridge for up to a week.
