🫐 Equitable Recipe: Blueberry Crumble for All
This Blueberry Crumble is comforting, easy, and made with pantry staples. It's flexible enough to use fresh or frozen blueberries and adaptable for gluten-free or dairy-free needs. Best of all, it’s delicious enough to impress—but simple enough for a weeknight treat.
Serves: 6 Prep Time: 10 minutes Bake Time: 30 minutes
Ingredients:
For the filling:
3 cups blueberries (fresh or frozen)
1 tbsp lemon juice
1 tbsp cornstarch or flour
2 tbsp maple syrup or brown sugar
For the crumble topping:
½ cup rolled oats
½ cup flour (or almond flour)
⅓ cup brown sugar or coconut sugar
¼ tsp cinnamon
Pinch of salt
¼ cup melted coconut oil or butter
Directions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, toss blueberries with lemon juice, cornstarch, and sweetener. Pour into a small baking dish.
In another bowl, mix crumble topping ingredients until sandy in texture. Sprinkle evenly over the berries.
Bake for 30 minutes or until the topping is golden and the berries are bubbling.
Let cool slightly before serving. Bonus: it’s amazing with vanilla yogurt or a scoop of plant-based ice cream.
Tips to Keep It Budget-Friendly
Frozen blueberries are often cheaper and just as nutritious.
Use what you have. Swap oats for granola or use gluten-free flour blends.
