🍺 Equitable Beer-Braised Pulled Chicken Sandwiches
Servings: 6 | Cost: Around $15 | Prep Time: 15 minutes | Cook Time: 2 hours
Ingredients:
2 lbs boneless, skinless chicken thighs or breasts
1 tablespoon olive oil
1 large onion, sliced
3 cloves garlic, minced
1 cup beer (lager or pale ale works best)
1 cup chicken broth
1/2 cup barbecue sauce
1 teaspoon Good Thyme Gal Smoky BBQ Seasoning
Optional: buns, coleslaw, pickles for serving
Cooking Directions:
Sear the chicken — Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Season chicken with Good Thyme Gal Smoky BBQ Seasoning and sear until lightly browned, about 3–4 minutes per side.
Add flavor — Stir in onions and garlic, cooking until fragrant.
Deglaze with beer — Pour in the beer, scraping up any browned bits from the bottom of the pot.
Simmer — Add chicken broth and barbecue sauce. Reduce heat to low, cover, and cook for 1.5–2 hours until chicken is tender.
Shred & serve — Remove chicken, shred with two forks, return to the pot, and stir to coat in sauce. Serve on buns with coleslaw and pickles.
