Ingredients
1 cup canned or frozen corn kernels (thawed)
½ cup all-purpose flour
1 large egg
¼ cup milk (dairy or nondairy)
2 scallions, thinly sliced
½ tsp garlic powder
½ tsp paprika
½ tsp salt
¼ tsp black pepper
1 tsp baking powder
Oil for shallow frying
Optional: fresh lime wedges & sour cream for serving
Instructions
Make the BatterIn a medium bowl, whisk together flour, baking powder, garlic powder, paprika, salt, and pepper. Stir in the egg and milk until just combined, don’t overmix. Fold in corn and scallions.
Heat the OilAdd ¼ inch of oil to a skillet and heat over medium. The oil is ready when a tiny drop of batter sizzles on contact.
Fry the FrittersScoop 2 tablespoons of batter per fritter into the skillet. Flatten slightly. Cook 2–3 minutes per side or until golden and crisp.
Drain and ServeTransfer to a paper towel–lined plate. Serve warm with lime juice, sour cream, or your favorite dipping sauce.
