Everyone in America is super excited about the NFL Playoffs this year. There have been a few underdogs who look like they could push through and go to the Super Bowl LVIII.
If you are not a fan of the game but enjoy the comradery, that is also fine. I think the main reason we Americans enjoy the Super Bowl so much is that we can see in real time the hard work, dedication, and pure drive these teams have to have to get there.
Being a part of something greater than yourself always feels good, especially when it is a part of history.
Since this is the last round of Playoffs I thought it fitting to introduce to you one of my favorite dips. It is called Taco Joe.
It is easy to make, and the flavor is well worth the cooking time. It is best made in a slow cooker and great for game days such as this.

Taco Joe Dip Recipe
Ingredients
1 can-(15-1/4 ounces) whole kernel corn.
1 can-6 oz) kidney beans, rinsed and drained
1 can-(15 oz) black beans, rinsed and drained
1 can-(14 1/2 ounces) stewed tomatoes
1 can-(8oz.) tomato sauce
1 can-(4oz) chopped green chiles, drained
1-envelope of taco seasoning of your choice
1/2 cup chopped onion
1 bag of Tortilla chips
Cooking Directions
In a slow cooker, combine the first 8 ingredients.
Cover and cook low for 5-7 hours.
Serve with Tortilla chips. Top with chives and sour cream.
