This Chicken-Mushroom Risotto is perfect for Celebrating Mother Earth...



Earth Day is an annual event on April 22 to demonstrate support for environmental protection. The first Earth Day in 1970 enlightened millions of Americans from all walks of life to birth what we call the modern environmental movement. Since then, Earth Day has evolved into the largest civic event on Earth, enlisting billions across 192 countries to assist in safeguarding our planet and fighting for a brighter future. 


As citizens of the Earth, we should all strive to leave our world much better than we found it for the generations after us. -GTG

Easy Ways To Celebrate Earth Day:


*Here are some easy and unique ways to Celebrate Earth Day. 

  • Scatter native wildflower seeds to promote clean air and the survival of indigenous wildlife.

  • Have a Recycling party.

  • Switch out straws from plastic to aluminum or the biodegradable kind.

Chicken Mushroom Risotto Recipe




Ingredients


  • 6 Cups Low sodium chiken broth

  • 4 Tablespoons of Olive oil

  • oz. mixed mushrooms, such as cremini, button, oyster and shiitake, thinly sliced.

  • 2 Cups shredded leftover cooked chicken meat

  • 1 medium Shallot, thinly sliced

  • 3 cloves of Garlic, chopped

  • 2 Cups arborio rice

  • 1/2 Cup dry white wine

  • 2 Tablespoon butter

  • 1/4 Cup grated Parmesan cheese (1 oz.)

  • 1/4 Cup packed fresh flat-leaf parsley leaves, finely chopped


Cooking Directions


  1. In a 2 qt. saucepan, heat the broth on low-heat.

  2. In a deep 12-in skillet, heat 2 Tablespoons oil on med-high heat.

  3. Add Mushrooms and a pinch of salt. Cook for 4-5 minutes.

  4. Stir twice.

  5. Add Chicken. Stir for 1 minute. Transfer to a bowl and set aside.

  6. In same skillet, heat remaining oil on medium heat.

  7. Add shallot, garlic, and 1/4 teaspoon salt. Cook for 2 minutes or until mostly absorbed, stirring.

  8. Stir in hot broth, 2 ladlefuls at a time, waiting until mostly absorbed before adding the next batch, stirring frequently.

  9. Cook 22-30 minutes or until rice is just tender, stirring and adding broth.

  10. Add butter and chicken mixture to rice.

  11. Cook 2 minutes, while stirring.

  12. Remove from heat. Stir in Parmesan.

  13. Garnish with Parsley.

  14. Serve Immediately.
