Earth Day Eats- Chicken Mushroom Risotto Recipe
Ingredients
6 Cups Low sodium chiken broth
4 Tablespoons of Olive oil
oz. mixed mushrooms, such as cremini, button, oyster and shiitake, thinly sliced.
2 Cups shredded leftover cooked chicken meat
1 medium Shallot, thinly sliced
3 cloves of Garlic, chopped
2 Cups arborio rice
1/2 Cup dry white wine
2 Tablespoon butter
1/4 Cup grated Parmesan cheese (1 oz.)
1/4 Cup packed fresh flat-leaf parsley leaves, finely chopped
Cooking Directions
In a 2 qt. saucepan, heat the broth on low-heat.
In a deep 12-in skillet, heat 2 Tablespoons oil on med-high heat.
Add Mushrooms and a pinch of salt. Cook for 4-5 minutes.
Stir twice.
Add Chicken. Stir for 1 minute. Transfer to a bowl and set aside.
In same skillet, heat remaining oil on medium heat.
Add shallot, garlic, and 1/4 teaspoon salt. Cook for 2 minutes or until mostly absorbed, stirring.
Stir in hot broth, 2 ladlefuls at a time, waiting until mostly absorbed before adding the next batch, stirring frequently.
Cook 22-30 minutes or until rice is just tender, stirring and adding broth.
Add butter and chicken mixture to rice.
Cook 2 minutes, while stirring.
Remove from heat. Stir in Parmesan.
Garnish with Parsley.
Serve Immediately.
